Rice with Meat in the oven Recipe


All family loved it , so delicious rice.. Highly recommended:)

Peymacun Recipe (Turkish style pizza)


This dish originally cooked with ground meat and called "lahmacun", this is the version with cheese, in turkish cheese mean "peynir" so we call this "peymacun" :)
The size is normally bigger, i wanted to make it smaller , it s nice appetizer, mine is a bit crispy , the way i liked, if u dont like , u can add a bit water in the cheese mixture or maybe chopped tomato, with tomato juice it d be softer.

Turkish Menemen Recipe



This is today breakfast meal , i love it , easy to cook and delicious. This is the most popular egg dish in Turkey.


Ingredients

4 tomatoes
4 green bell peper
4 green onion
4 eggs
Salt
Black Pepper
Red pepper(optional)
olive oil

Cook chopped onion&bell peppers in a skillet for few min, add peeled&chopped tomatoes in it, cook till wilted. Over low heat , add eggs,salt, black pepper,red pepper and scramble in the skillet until eggs fairly firm.

Serve warm,

Cornelian Cherry Sherbet


The Sherbet is very important in our culture, at the past we were not serving the raw water to our guests, they were adding some lemon or mint or something. Everything was a chance to make sherbet.
This one is one of that i love, and good chance to drink before summer goes away.
I like the sour taste of cornelian cherry.

Ingredients

1 kg cornelian cherry
0,5 kg granulated sugar
3 lt water



Put all ingredients in a deep pot, boil them all , after decrease the heat and let it boil more around 20 min. Leave cherries, add sherbet in carafe, let it cool in fridge, you can add some lemon piece in it..
Serve cold,

Gavurdagi Salad Recipe


A delicious salad which takes the name from a mountain in Turkey.
It is great accompany especially for kebab and meat dishes.


Ingredients

3 medium tomatoes, chopped
1 small onion, chopped
1/2 cup parsley, chopped
1/4 cup walnut, crushed
2 tb spoon olive oil
1 tb spoon pomegranate paste
2 tb spoon lemon juice
1 tb spoon cayenne pepper, crushed
1 tb sp sumac
salt

Rub onion with salt and sumac, mix with other ingredients exept walnut, place in a plate, sprinkle walnuts all over.

Eggplant Kebab Recipe



Last 2 days i noticed i cook kebab:) but we are Turks and love Kebab.. what to do:)

But i try to cook it less heavy avoiding using oil.

You can cook this in tray or better if u can cook in clay pots. Easy to make and delicious food..



Ingredients

500 gr ground meat

2 onion

2 cloves garlic

1 egg

1 table spoon bread crumbs

4 eggplant

6 tomatoes

4 green pepper

2 cloves garlic

Oil

Salt

Red pepper

Black pepper

Cumin

1 tea glass water



Slice the eggplants in circular shape, they shouldn’t be too thin as eggplant is an easily cooked vegetable. Wait them in salted water for 15 min.

Prepare your meatballs, meat, grated onions, garlic, egg,bread crumbs, salt,black pepper,red pepper and cumin, mix them all and knead for 5 min, shape them rolls.

Oil tray and lay the eggplant slices and meatballs as you see in the picture.





If you still have some eggplant slices at the end, you can place them in the empty places of the tray.

Chop tomatoes, green pepper and garlic, lie on the top of the tray, pour little oil , salt , and 1 tea glass of water.



I covered tray with foil paper.

Cook it in preheat oven 180 degree around 1 hour.

Egg Salad Recipe



This is the tradition in my family for Sunday breakfasts, easy and tasty recipe..



Incredients



5 eggs

1 onion

Parsley

Salt

Oil

Lemon juice

Red pepper



Boil eggs, chop eggs and onion , mix all the ingredients.

Cokertme Kebab Recipe (Bodrum Kebab)



It is another nice recipe from Bodrum. I have been there recently, it is very nice coast city which is famous with White houses without roof. Nice weather, nice beach, night life, everything is there.

Cokertme is the name of a village in Bodrum and this kebab is specially there.

In some places i ate with fillet meat, and some others with Kofte(burger), i like burger more so i cooked that way..







Ingredients




500 gr ground meat

2 onion

2 cloves garlic

1 egg

1 table spoon bread crumbs

3 tomatoes

1 table spoon tomato paste

3 big potatoes

Yogurt

Parsley

Black Pepper

Red pepper

Cumin

Salt



grate patatoes,add some salt and fry, it will be like chips , it is really nice and i have never tried to fry grated patatoes, it is great taste..

For kofte; meat, grated onions, garlic, egg,bread crumbs, salt,black pepper,red pepper and cumin, mix them all and knead for 5 min, you can make the shape however you like, and with little oil fry them or if you like you can prefer to cook it in oven as well .





For the sauce; grate tomatoes, with some oil , and tomato paste cook a few min, add some salt and red pepper..

For the service; put potato and yoghurt on it (i prefer to add some garlic into yogurt) put koftes, tomato sauces, and chopped parsley..

Serve warm..

Banana&Kiwi Cake



Eid Mubarek to all.. The holy ramadan is over yesterday , and today is the first day of Bayram(Eid). Whole month we fasted, stayed away from bad things:) now time to celebrate it. Everybody is out to visit relatives&friends, the children knocking our door for chocolate:) due to my dad s sickness we will spend the holiday at home, but we have too many guests so i made something to serve for them.

I am not a dessert&baklava person , so fruit cake is the best for me which is light and sweet:)



For the Cake;

4 eggs

1 cup granulated sugar

4 heaping tablespoons flour

Half a cup of cold water

1 package vanilla

1 package of baking powder



for Creamer

3 cup milk

2 tablespoons flour

1 tablespoon of starch

1 cup granulated sugar



1 package cream santis







for the cream , put ingredients in a pot and cook till it become like custard. Let it cool.



for the cake, mix eggs&sugar, after add other ingredients and mix more 4-5 min.

Cook it in the preheated oven 180 degree about 40 min.

for santis use the direction on the package.



after the cream got cold, add 3 spoons santis.

When the cake cooked and cooled , divide it(i could just divide 2) , all the lines cover with the cream and i put banana&kiwi on it, but you may add whatever you like, and cover it with other cake lines and repeat.

On the cake cover with santis and fruits again, keep it in the fridge at least 1 hour..

Bodrum Mantı (Fried Turkish Ravioli)



I know it is been long time that i didnt write but i had reasonable excuses.

My dad had a big operation , stayed long weeks at hospital. While we were thinking he was recovering, there were some complications, thanks GOD he is better now at home.

Hard times also good to understand your real friends, some of friends made me disappointed, some other made me surprised and felt they are more closer to me than i thought before..

Anyway this is life, all the bad and good things are for us. The most important thing is we r healthy now and i m back with a nice recipe:)

I tired this at a restaurant by a friend recomandation , and ididnt feel regret at all!!! it is amazing delicious, called Bodrum mantı, as far as i learnt it is cooked in Bodrum which is a port city in the southwestern Aegean Region of Turkey.



Ingredients



2 cups flour(300 gr)

1egg

125 gram butter

125 gr. mince

1 onion

2 cup yoghurt

Enough salt

Black pepper

Red pepper, garlic.

Mint







For the dough,put flour ,egg,1/2sp salt,and enough water and knead it.when it is ready, divide it 2 piece and open it with rolling pin,it should be thin around 1mm,

Honestly mine wasnt thin enough, if it is thin ,it d be much better..

On the other hand with some oil cook chopped onions , add mince with salt&black pepper.



Cut each dough sheet into squares of about 1.5"x1.5".Put a very small piece of filling at the center of each square. Continue until the dough is finished.

when all the mantı are ready ,fry them for some seconds, they will be cooked so easy, drain oil.

Melt butter,add tomato paste, some red pepper.

i like yogurt with garlic, so mix your yogurt with chooped garlic, you know if you eat this ,you have to eat it with garlic,

on your mantı, add yogurt and sauce,on the top add mint and you can serve..

Patatesli Cig Kofte Recipe



I know i know, again it s been long time that i havent wrote , but the blogspot was restricted in Turkey and i was in a diet, btw i lost 4 kg :)) if i have kept cooking , i wouldnt be able to lose weight, i need to lose still 4 kg more but i cant do long months diet..


Today is sunday i am at home, lazy and i was watching a tv channel which is showing traditional turkish foods, i saw it there and wanted to try , i pressumed it would be amazing , and yes ! ,t is great, easy to do and tasty. Çiğ mean raw, the original çiğ köfte is made by raw meat , it s not cooked, the meat cook with kneading by a lot of hot pepper, long hours it need to be kneaded with hot. This s alternative veggie, more healthy and same tasty recipe from Antakya , a city in Turkey, near Syria border.


Ingredients


1 cup bulghur , small grain (200 gr)

1 medium size onion , finely chopped

4 medium potatos

2 table spoon tomato paste

1 table spoon hot pepper paste

1 table spoon pomegranate molasses

Salt

Black Pepper

Cumin

Red pepper

Basil

Olive oil



Wash the bulghur with cold water and drain well , knead it with all ingredients except potatos while the potatos are boiling on the fire.
We need to knead bulghur finely if not it would be so crusty as we didnt cook the bulghur.


After it get a bit softer , blend boiled potatos, it should be like puree, and add on the bulghur knead well , when i tasted i felt it need more tomato paste so i added a bit more , you can also add whatever you like, it neeed to be knead well and the color should be homogeneous. then shape them with little olive oil as you wish and put some parsley on it , it is ready! I know it is been long time but i was so moody and didnt feel to cook or do anything else, but i am back to life:)

I had this dessert in Dubai and loved it , easy to make, tasty and light dessert which i like. Btw, Om Ali means "mum of Ali" :)

Nice Weekend







I know it is been too long but i felt lazy to write something. I had fully busy weekend with friends and relatives. On saturday , my friends came to my home and they were so eager to taste the foods i cooked , that was their first time, i had a lot of unsucsesful cooking experiencence ,that is why they all were used to think i cant even cook an egg:))

till they tasted the foods i done. Even i didnt let my mum to help me because when someone even touch a bit, it would be "ooo , your mum cooked that" :) i didnt take risk , i done all. I went home around 7 pm on friday, had shopping and preaperad cookie very tasty called Ladies Kisses; I have seen it in Cafe Pepela. Also from friday i cooked cake and Yaprak Dolma . on Saturday i prapeerad Hummus, Eggplant Salad, Chicken Burger, Falafel&Tarator Sauce.





My mum also made a dessert and Borek (pastry), maybe she was doubt that i may fail:) dont know.. but they mostly liked as they told.. And we had nice lunch with chating about old stories in university..

Potato Ravioli (HINGAL)



I am feeling right now that i am in the heaven , while i am tasting potato , butter.. yummy!!
When i was a kid ,we had a neighboor who used to cook "Hingal" , i always loved it , and i felt like i am kid now, the taste the same like she did, her name is Yasemin who was living next door; i have liked her, life is weird, i havent seen her from years , i dont know where she is or what she does, this hingal just made me remember great memories. I guess i am getting old as i started to talk about past:)
She is Circassian , and this Hingal a Circassian food which is also cooked in Cantral Anatolia area of Turkey.
The difference from the usual turkish ravioli is ; hingal bigger than regular turkish ravioli, there are some different shape variations, you can do whatever you like. I used a form that i like.
Ingredients
For the dough;
1,5 gl of all purpose flour (300 gr)
1 egg
1/2 table sp salt
water
For inside;
2 potato
1 onion
red pepper
black pepper
salt
butter


peel potatos, and cook them till they get soft, other hand with some butter cook sliced onion till they get golden brown. Mash cooked potato and add on the onion, include pepper and salt, cook a few min more and let it cool.
Mix all dough ingredients , knead enough , it shouldnt be soft, open it enough , dont make it so thin, i used my form and cut them circular.


i put the circular dough, add inside some potato mix , and close it. It got nice shape , you can also close yourself but pay attention not them to open.
Wıth the ingredients i used, it is been 16 pieces which is enough for 4 but it is so delicious maybe just 2 may eat all too:)
Boil some water add a bit salt, put the hingals inside , cook for 10 min. Drain it . For the top melt some butter with red pepper and add on the hingals.

Banana Roll Cake

I found this recipe at Food in Life. It is my first trial to make a cake. Was i succesfull?? Honestly the taste was good but the apperance not really.. I dont like so much about sweet, dessert, cakes etc. ; maybe that is why i am not succesful at this kinda things, but i believe i will be better. I brought the cake at the bank today for my colleagues to taste, and everybody seems happy; i dont know if they really liked or just to be nice , but they really seemed happy. Here is the proof :)

Kavurma



It is Eid , and every Eid my mum make kavurma..
And i have to give recipe. It is sooooo delicious meat. The specialty of this kavurma, it is maden in ;we call "Sac" ; a special iron plate.
Ingredients
2 kg boneless lamb/beef
200 gr tail fat
Salt



Cut meats small pieces, add into "Sac", it doesnt need any other thing, it should cook around 2 hours with low heat. It should get water first by itself, after it will remove water itself, after it removed all the water add tail fat&salt, and mix it well , cook till all the fat melted, and it is ready, serve it warm with rice.

Puff Pastry (Pofuduk Borek)



Eid is going on in all muslim countries with all beauty. People visiting each other, eating dinner, sharing good things with feast sole. In every home there is a hurry to cook something for their guests and to welcome their guests in best way.
I cooked a pastry for guests, sure it is not only thing , i will share most of them with you so you can a bit feel about the feast we are having.
This recipe; i saw my friend Ferhat's blog, he has put inside onion and green pepper but i didnt add , i think you can add whatever you want.
It is really easy&delicious recipe which everybody loved.






Ingredients
10 puff pastry
150 gr feta cheese (whatever you like)
1 clove garlic
parsley chopped
100 ml milk
1 egg
black pepper
red pepper


mix all ingredients, put inside pastry, you can roll them or make triangles, the shape is up to you.
put some egg yolk on the pastris and cook in the oven till they got golden brown.

a Sunny Istanbul Day with Kuru Fasulye&Boza



Yesterday my long 9 days holiday started and the weather was luckily better than i could wish..

I had chance to walk the places i have never been in my city, walked all the ways around 15 km.. WOW.. i cant believe myself walked all the way; we just stopped every store ,every places, kissed every children and interracted with people as much as we can.
Our walking group was 8 people, enjoyed with the day a lot.
We stopped by a restaurant for lunch and ate Kuru Fasulye ( Haricor beans) with pastirma (beef that has been smoked or dried in the sun after being treated with spic) , pilaf (rice), pickle and for the dessert ; semolina dessert. All was soo delicious, i reccomend you to stop by there and taste kuru fasulye.








The other stop was Vefa Bozacisi which is here from 1876.





Boza is a drink made by a kinda semolina, water and sugar; it is known as winter drink, served with cinnamon on it.



also roasted chickpeas inside inseperable from boza.





Mustafa Kemal Ataturk has drunk Boza there and they still keep the glass there ..









Eid ul-Adha (Kurban Bayrami)

Eid ul Adha, the Feast of the Sacrifice or Kurban Bayrami; whatever you call it.. It is one of important religious holiday celebrated by muslims. We will celebrate it in Turkey on next tuesday, as i know some arab countries it is 1 day later on wednesday. in Turkey it is offically 4 days holiday by this feast; when i combined it with weekends, my long 9 days holiday officially started yesterday :)
I always loved to celebrate these feasts, but it was better when i was a kid, was more meaningful, I had grandparents to visit, had neighboors to knock the door and get some money&candy.. I dont have any of them now unfortunately, my grandparents passed away long years back and the neighbourhood almost dead. Thanks God there are still some children to knock our door and ask for candy:)
Kurban means ; to sacrifice an animal for God sake. Some people comments very badly about this feast. They are calling it barbarity but really dont understand why; by this feast we just dont sacrifice animals, we help poor people as well.It doesnt mean just sacrifice the animal, put the meat in fridge and eat all year! NO! it is not like that, it is for also charity..
For example in Turkey (in other muslim countries can have other variations) when someone cut an animal, they have to share it with at least 7 people who didnt/cant sacrifice an animal so it give you chance to help other people, there are millions who cant buy meat, millions of children..
Also to cut an animal , there are some islamic rules which will give minumum pain to the animal.
Sharing is great habit, and the Sacrifice feast is great chance for people to share, to remember poor people maybe who never ate meat.
