Eggplant Kebab Recipe



Last 2 days i noticed i cook kebab:) but we are Turks and love Kebab.. what to do:)

But i try to cook it less heavy avoiding using oil.

You can cook this in tray or better if u can cook in clay pots. Easy to make and delicious food..



Ingredients

500 gr ground meat

2 onion

2 cloves garlic

1 egg

1 table spoon bread crumbs

4 eggplant

6 tomatoes

4 green pepper

2 cloves garlic

Oil

Salt

Red pepper

Black pepper

Cumin

1 tea glass water



Slice the eggplants in circular shape, they shouldn’t be too thin as eggplant is an easily cooked vegetable. Wait them in salted water for 15 min.

Prepare your meatballs, meat, grated onions, garlic, egg,bread crumbs, salt,black pepper,red pepper and cumin, mix them all and knead for 5 min, shape them rolls.

Oil tray and lay the eggplant slices and meatballs as you see in the picture.





If you still have some eggplant slices at the end, you can place them in the empty places of the tray.

Chop tomatoes, green pepper and garlic, lie on the top of the tray, pour little oil , salt , and 1 tea glass of water.



I covered tray with foil paper.

Cook it in preheat oven 180 degree around 1 hour.

Cokertme Kebab Recipe (Bodrum Kebab)



It is another nice recipe from Bodrum. I have been there recently, it is very nice coast city which is famous with White houses without roof. Nice weather, nice beach, night life, everything is there.

Cokertme is the name of a village in Bodrum and this kebab is specially there.

In some places i ate with fillet meat, and some others with Kofte(burger), i like burger more so i cooked that way..







Ingredients




500 gr ground meat

2 onion

2 cloves garlic

1 egg

1 table spoon bread crumbs

3 tomatoes

1 table spoon tomato paste

3 big potatoes

Yogurt

Parsley

Black Pepper

Red pepper

Cumin

Salt



grate patatoes,add some salt and fry, it will be like chips , it is really nice and i have never tried to fry grated patatoes, it is great taste..

For kofte; meat, grated onions, garlic, egg,bread crumbs, salt,black pepper,red pepper and cumin, mix them all and knead for 5 min, you can make the shape however you like, and with little oil fry them or if you like you can prefer to cook it in oven as well .





For the sauce; grate tomatoes, with some oil , and tomato paste cook a few min, add some salt and red pepper..

For the service; put potato and yoghurt on it (i prefer to add some garlic into yogurt) put koftes, tomato sauces, and chopped parsley..

Serve warm..

Kavurma



It is Eid , and every Eid my mum make kavurma..
And i have to give recipe. It is sooooo delicious meat. The specialty of this kavurma, it is maden in ;we call "Sac" ; a special iron plate.
Ingredients
2 kg boneless lamb/beef
200 gr tail fat
Salt



Cut meats small pieces, add into "Sac", it doesnt need any other thing, it should cook around 2 hours with low heat. It should get water first by itself, after it will remove water itself, after it removed all the water add tail fat&salt, and mix it well , cook till all the fat melted, and it is ready, serve it warm with rice.

Lady's Thigh Meatballs (Kadin Budu Kofte)

Turkish cuisine is full of foods which has funny names. It is one of them. Today after i decided to cook kadinbudu kofte, i searched why they gave this name? but i couldnt find.. Maybe it is because chubby:)) i really dont know. If you think this is funny name, also hear there are turkish desserts called "A Beatiful woman's Lips" (Dilber dudagi), "Finger of the vizier" (Vezir parmagi), "Ladys Belly" (Hanim gobegi) and etc.. I really dont know why this kinda names were given or who gave but funny.. isnt it? :)

I like kadinbudu kofte, very delicious and filling.
Ingredients
500 gr medium ground beef
1 onion, grated
1 egg (yellow part)
1 cup rice (200gr)
1/3 cup parsley chopped
feta cheese (optional)
3 cloves garlic (optional)
salt
black pepper
red pepper
For frying
4 spoonfuls of flour
2 eggs, lightly beaten
oil



First cook 1/2 of the ground beef with the onion. on the other hand , boil rice with 2 cup of water till the water goes off but dont make it so dry, you can add some salt while it is cooking.




Place in a large bowl and add in the remaining raw ground beef, egg, rice, parsley, salt and pepper, garlic and feta cheese. I like cheese and garlic and try to add everything, in original recipe there is no cheese and garlic, just i believe they can make a food just better!
Knead it for sometime. Leave in the fridge for 30 minutes. Then give them the shape . This makes approximately 16 kofte. Pour the sunflower oil in a frying pan and heat it up. Place the flour on a plate and beat the eggs in a bowl. First dip each kofte in the flour, then dip in the egg mixture.



Fry the kofte evenly.

I like it to serve it warm but it is also eaten cold.

Anchovy Rice (Hamsili Pilav) Recipe



As i have mentioned yesterday, in black sea region , you can find thousands recipes with anchovy. The rice is one of them . I never tried it before neither in a restaurant or at home so it was nice for me to cook this. I felt it was a real challange for me, i cooked it in a pan not in the oven , so i needed to turn the food and fry both face of it. But i was succesful, honestly i was afraid to screw it but didnt. The result is perfect either look or taste..
I cooked it in a medium pan , wish i have done more:)
Ingredients
1/2 kg fresh anchovy (filleted)
1 onion
1 cup rice (200gr)
pine nuts
currants
oregano
salt
black pepper
cinnamon
corn meal


Let the rice wait in hot water for 20 min, slice onions into small pieces. Cook it with some olive oil for a few min, after add pine nuts, cook few min more than add other spices and currants, i put little cinnamon,not much, some people like it sweet but i dont..
mix it well , drain the rice , pour onto onions , add hot water 2 glass, or it should cover onto rices..
Cook it with low heat till the water goes off ,but dont make it dry.




on the other hand lie some olive oil into pan , cover the outside of anchovies with corn meal and line the base and sides with just over half the anchovy fillets skin side outwards.




Pour the rice mixture into the centre ,




and cover the surface with the remainder of the anchovies.




Sprinkle a little olive oil over , and fry it with low heat 10 min, after 1 side fried , close a plate on the pan reverse it and cook other side of it. i know it sounds difficult but if i done it everybody can!!
Just one note; as the anchovies will get smaller after cooked, you have to put anchovies more,and line anchovies without any hole..
Serve it warm and enjoy with Turkish/Black Sea Region Traditional food.

Anchovy Recipe (Hamsi)



For the who dont know about, Turkey is a country surrounded with 3 seas; Black Sea at north, Aegean Sea at the west, and Mediterrian Sea at the south. For this reason, it is very rich with the fishes and fishes products, but unfortunately we arent so fan of sea foods. We are mostly bread, wheat people as anatolian culture. It is like , although it is surrounded with 3 sea, most of turkish people dont know to swim!
This season is very generous with the fish, yesterday on the news they were anouncing that it is anchovy season and it is so cheap, and bla bla bla. A chef gave 12 recipes with anchovy which is so easy and tasty.
In Turkish we call it "Hamsi". In black sea region there are thousands recipes are avalible with it, whatever u think ; anchovy bread, pickle, rice ,everything..
When i surprise to see Americans use pumpkin in a lot of ways, if you have known about how anchovy is used in Turkey, i am sure you would be really surprised!
It is very easy and tasty way to eat fish.


I got 1 kg anchovy , was planing to use some part for Hamsi Kusu and rest of them for the rice with anchovy, but the tast of it was soo amazing and my family asked me to cook just this and tomorrow we will buy some more and use it for rice. This is winter time and the weather is cold and rainy, i dont wanna go out, so my sister promised to go out and buy it for me tomorrow, so we were agreed and all of them cooked as hamsi kusu, Win Win game !everybody happy:))

It was a real challange for me , because when my mum brought the fish and it wasnt cleaned so i needed to clean inside. I have never done it, first try was disaster, i almost mashed the fish!
I learnt the way from my mum.
First i had to break off the head , one finger has to clean inside of it,and take the bone out with the tale. I felt so weird , it was hard for me to do it and was a challange to see my hands with some blood although it is fish. Anyway i was succesful , just it took much time as i had to wash my hands quite often:)






Ingredients
Fresh Anchovy
Corn meal
Salt
pepper


Mix the fishes with salt and pepper ,very well. Put a fish above to other one. The inside part has to face to face. After mix it with corn meal, cover the fish very well with the corn meal. Heat the pan and fry them with some oil. If you fry some onion rolls and serve them with lemon.

Tavuk Guvec (Chicken Casserole)

I got the food taste which made with casserole ,
i have cooked it with lamb so this time i tried with chicken and eggplant. The thing with casserole; it should cook on the low heat ,and long time, like 1-2 hours. I love the smell when it is cooking , reult is amazing , the meat or chicken or the vegs just delectable. And the favourite food to serve with guvec is rice which is cooked with butter and chicken broth; how can i say no these foods:))

Ingredients
1 kg chicken (boneless) sliced
3 eggplants sliced
3 potatos sliced
1 onion sliced
2 tomatos sliced
7-8 mushrooms sliced
3 cloves garlic
Salt
Black pepper

First put onions at the floor of the pot, after garlics, and chicken, potatos on it, after eggplants,mushrooms and cover the top with tomatos sliced... add oil,salt and black pepper. I covered the pot with aluminum foil and close the cover. fisrt cook 10 min with high fire, after get it on the low hear and cook 1 hours, i just tasted it , all the taste mixture perfect, althought i dont eat mushrooms, it has melted and the taste inside the food yummyyyyyyy:)
if you cant find guvec or tajin, you can cook it in regular pots.

Guvec/Tajin (Lamb and Veggie Casserole)

One of my morrocon friend Rachid give me a gift called Tajin . Actually in Morocco it is the traditional way of cooking, they cook meats, chicken,fish etc. in that pots. The traditional tagine pot is formed entirely of a heavy clay, which is sometimes painted or glazed.
in Turkey we call this type of foods "guvec", it is a kinda similar . And the taste is i think similar.





I served it in the tajin which is given by my friend. If you cant find this much attractive plate to serve, you can serve with your regular plates , the taste is same and everybody will love it:)


I cooked rice with this, they are good friends i believe..

Ingredients
750 gr lamb cut in cubes
oil
2 medium onion, sliced
4 garlic cloves, sliced
2 tomatos,sliced
2 potatos
3 green pepper,long and thin cutten
Salt
black pepper

Chicken Burger (Tavuk koftesi)


Today when i checking some recipes, i saw one fish burger recipe in one of supermarket website, me and my family is not fan of fish so i decided to try this with chicken and you cant guess how much i made a good decision. while i was cooking it, all family came to kitchen to check what is been cooking:)) the smell was good and the taste hmmmmm.... really amazing..

Hope you try and like it too.. i highly reccomend this recipe..


Ingredients
2 chicken fillets
100 g grated cheese
2 slices stale bread
1 onion
1 egg
2 cloves garlic
A tea cup bread crumbs
5-6 parsley
Salt and pepper
For frying oil

Finely chop chicken , you can also ask butcher to make it as mince. Chop well onion, parsley,garlic . wet the bread and after squeeze iy. add all onto chicken ,also cheese and egg, mix well all of it ,add salt and pepper, knead well , form the chickens as burger.. after rolling them with bread crumbs , fry their 2 faces till it get golden brown..

Arnavut cigeri (Fried liver) Recipe


In Turkey we call this as Arnavut Cigeri , arnavut means albenian in turkish.
I am really not sure if the albenians cook the liver in this way or we just made it up the name :)
If you like liver ,this recipe will be your indispensable. Very tasty and easy to prepare, also liver very good with the onion salad , great accompony!! you should try;)



Ingredients

1/2 lamb liver
1 gl bread crumbs
salt
red pepper
oil

roll small pieced livers with the bread crumbs, and also mix it well with salt and red pepper, fry it for 5 min..thats all.. really ,this much easy and tasty..

i also fried some potatos..
To accompony this food, finely chopp an onion, rub with some salt,to leave it from salt ,wash it . add chopped parsley, add some sumac , red pepper and lemon juice..

Bulghur Pilaf with eggplant&meat(patlıcanlı etli bulgur pilavı) Recipe


Today i lived one of my worst day, first time i was hurted because i trusted a person. i wasnt expecting never ever, he really killed me, but life goes on right?
i cooked with hoping therapy; did it work? not at all!!
i even didnt eat today , didnt taste, my mum said the taste is good, hope you eat this in better days, better than mine..


Ingredients

2 gl bulghur
4 eggplants
2 onions
250 gr lamb(small chucks)
2 tomatos
2 green pepper
salt
black pepper

Cut the eggplants into long strip, fry .
at the other hand,cook finely chopped tomato, onion,green pepper,and meat with butter for 10 min, and then add some water,saltiblack pepper and cook more till the meats get softer.

place the long eggplants in a pan, keep some part of the eggplant outside of the tray,put the cooked meat on the eggplants.wash bulgur and add on it, then the eggplants outside the tray , close onto bulghur. put smth on it like a plate ,press to avoid it open.add 1,5 gl of cold water,
cook it till the water end..
serve warm..

Chicken Cordon Blue


I like chicken more than meat , i like everything with it but cordon blue is one of my favourite dish, it is easy and tasty food.
I fried it but also you can try it in oven, it could be light but fry always more tasty, what you think?

Ingredients

4 boneless chicken breasts
4 slices ham
bread crumbs
4 slices cheese
2 Eggs
Salt
black pepper

Pound your chicken breasts out before starting, this will make them more tender. put some salt and black pepper it.Place ham on one side and cheese on the other of uncooked chicken breasts and close it. After doing this, drop into first beaten eggs and after bread crumbs.
pound the end of the chicken to avoid it open ,
heat oil and fry the chickens till they get golden.

Icli Kofte(stuffed mince balls) Recipe


This food was really hard to cook, i always loved it, i cant say it is cooked at my home so often but i understood why; it is realllyyyyy difficult to make it and takes much time, but i always love to eat it, i have guessed it is too hard but not this much expected:))
when i eat it ,i will eat slower anymore as i understood how hard it was cooked:)
i should honestly say when i was filling the bulghur, my mum helped me as i wasnt so successful.
Içli köfte is a food oftenly cooked in easten part of Turkey, i preffered to boil it to make it light but also you may fry it and i like it more ,but too fatty..
By the way i should add the pictures in recipes ;my mum's hands:)


Ingredients
1 cup fine bulgur
1 medium onion
1 tablespoon chili paste
1 teaspoon cumin
1 cup semolina
One full teaspoon of salt

For Inside;
250 gr ground beef
1 sp butter
3 onions
1/2 gl walnuts
black pepper
salt
cumin

Soak bulgur with 1 cup boiled water,let stand half an hour,add semolina, chopped onion,chili paste,salt,cumin,and knead.
cook 2-3min minced meat with butter, then add the chopped onion cook 6-7 minutes. Add spices and finely chopped walnuts. cook for some min and let it cool.
The most difficult part start now, get some bulghur as big as a walnut, and with one finger, open it from middle, and make it bigger with turning in your hand, it should be like a bell pepper.
It should be thin enough, when it is big and thin enough fill it with mince we prepared.
after you prepared close the mouth of it.
Boil some water and put the readp balls, and cook 8 min,
you can also fry it.
Serve it warm..

Steak with Tomato sauce


Today i cooked steak, i should thanks to the butcher man ,because he gave really good one:)) hope you are lucky as much as me..my mum said today a lot of food at home so please dont cook but i wanted ,so i just cooked for myself:))
1 piece steak was enough ,it wasnt thin, and also not so thick, it s around 2-3 cm thick.
When i put my steak to my plate i also did a rose from tomato ,it is good and easy way to make food look as good as it tastes.

Ingredients

1 piece steak
1 tomato
2 cloves garlic
Fresh basilicum
oil
salt
black pepper
parmesan cheese

i put very little oil in a pot, i cooked both 2 sides of the steak for 10 min on the little fire, while you are cooking it, add some salt and black pepper both sides.
on the other hand, put some oil in a pan,add chopped tomato,garlic, salt,black pepper and fresh basil, by the way basilicum again from my mumy is balcony,cook them for 10min also.
after your steak in a tray, add tomato sauce ,and the top fill with parmesan cheese,i really love it!!
heat your oven with 180 degree and cook your steak till the parmesan get brown gold..
after i take it out,i added more parmesan..i love it what can i do:))

Firinda hunkarbegendili tavuk (chicken with eggplant in the oven)


A few days ago i have cooked ali Nazik kebap, and the eggpland food there i cooked original name is hünkarbeğendi, "Hünkarbeğendi" in turkish mean is "Sultan liked", i think that food has been cooked in Ottoman palaces for sultans ,thats why it got this name,it s funny right:))
even sultans liked so most of people suppose to like this food even if they dont like eggplant, the béchamel sauce give great taste into eggplant.. but my mum complain about i cooked too often Hünkarbeğendi so i think i should stop for sometime to cook eggplant:)

Ingredients

1 kg chicken, chopped
2 onions
3 green peppers
2 clove garlic
2 tomato
1 sp tomato paste
butter
salt
black pepper

For Hünkarbeğendi

butter
6 pieces of eggplant
1 tablespoon flour
1 cups milk
2 gl cheese
salt

Put butter into pot. Add chooped onions,green peppers,garlic,tomatos,tomato paste and gently turn,and add also salt and black pepper. after some min add chickens and cook it for 10 minutes. On the other side of eggplant are grilled over a fire or oven tray. melt some butter, add flour a tablespoon,cook it a bit and while you are adding cold milk,keep mix it till it get a bit solid. after our Béchamel sauce s ready add roasted and chopped eggplants and 1/2 gl of cheese, salt and mix it ,andddd it s ready. if your chicken also cooked..lie chickens in a tray and your hünkarbeğendi on it and add top your cheese.
cook it in oven till the cheese get brown..

Hunkar begendi Recipe


Today i didnt feel to go out, weather is really hot. i noticed that i havent cooked some main dish from some time so i decided to cook some meat sih, and hunkar begendi is a dish from Gaziantep which is a nice city in turkey, i used mince for this but also you can cook with meat, and i used butter which makes it really more tasty.


Ingredients


4 Eggplant
butter
3 Coffee Cups Flour
3 Coffee Cups Milk
2 Coffee Cups Grated Cheddar Cheese
500 g mince
4 Piece Tomato
4 Piece Pointed Pepper
3 Coffee Cup Meat Juice
Salt

Put eggplants in oven. After changing their skins,mash with a fork to help. In a large skillet, melt butter,add flour and cook a bit, Then gradually add milk. Aubergine mashed with a fork for 1-2 minutes, 2 cup grated parmesan to the pan and transfer.
In a separate pan, put butter,add chopped onions and cook until pink healed. Stir mince. After 2-3 minutes, chopped tomatoes, green pepper, meat juice and add salt. After 10 minutes, download Firefox.Put your meat on the eggplants when you serve.

Beef with vegetables


Hello dear followers,
i was away from home for sometime so i couldnt cook but i will compansate that on weekend:)
Today at home the menu is beef with vegetable and oven spaghetti.

Ingredients
4 piece steak (is opened thin)
1 zucchini
1 red bell pepper
Fresh Basilicum
1 sp tomato paste
2-3piece chives
2 glove garlic
oil
salt
black pepper

lay some salt and black pepper on to steaks , and let them wait till we prepare inside of them. heat some oil and add finely chopped zucchini,red bell pepper,fresh basil,chives and garlics, cook them for a few min. when it s ready ,put some on them on the steaks and roll them, i keep 2 picks to avoid them to open. after put them all in a tray, melt 1sp tomato paste with hot water and all it on the tray and put it in oven for 20-25 min.

Burger and Spinach Puree Recipe


Today noon when my sister was leaving home asked for me to cook smth with meat, thats why i cooked burger. i like people to demand for me to cook smth and i love to see and hear their comment about my foods , sure if it is good comment:) luckily till now nobody didnt get poisoned or give bad reaction.. ;)

Ingredients for Spinach Puree
1 kg spinachi
1 onion
1 sp butter
1 sp flour
1 gl milk
2 clove garlic
salt
black pepper
parsley

clean spinach and cook withput adding water just with some salt till it get soft..while it s cooking, put butter and finely chopped onion,and cook a bit, after add flour , burn a bit, and while u re mixing up add the milk slowly and mix it till it get mastic.after add , garlic,salt,black pepper, and finely chopped parsley and mix,cook a bit.
when spinachi is ready , put it in blender and make it puree, after add this spinachi into your ready souce, mix well and cook a few min together and it s ready..

Meatball(köfte)

500 gr ground meat
1 onion
1.5 tea glass bread crumbs
1 egg
black pepper
mint
salt
red pepper
cumin

Put all ingredients in a bowl and knead finely, when it s ready take smaller pieces and shape like hamburger, put them all in a oily tray, and cook 10 min in heated 200 degree owen.
serve it with spinachi..

Crepe with Chicken Recipe



Today i was feeling so down , so i decided to cook smth , it s better than eating tooo much and gaining weight..
i needed smth tasty, easy .. so i wanted to cook crepe with chicken.. it was really tasty, i had cooked for 4 , and everybody asked me to cook more but i didnt find more energy to cook again:)
and the thing i found out today that i got speed, i cooked around 45min, normally it takes more:))


Ingredents
200 gr chicken cut small pieces
1 tomato
1/2 onion
1 red bell pepper
salt
oil
red pepper
black pepper
oregano
basil

For Crepe

1 glass of milk
1 glass of flour
1 egg
salt


i put salt and spices into chicken and mix all, while they waiting, i cut small pieces, tomato,onion,red bell pepper, and garlic.. i put some oil and added the vegetables, cooked a bit, after i added the ckickens ointo vegetables and let it cook for around 25 min, while it s cooking, for the crepe , i mixed milk,flour,egg, and salt. i put some oil into pan and added some crepe mix, and extend it like a circle, if it s thiner , it s better.. after my chickens and crepes are ready , i put some chicken vegetable mix into crepe and roll it. i did all of it same and put into a tray(oiled before), i made some tomato souce on it (optional) and i added 1 piece cheese in all crepes..
and put it in owen till all cheese get melted and cooked..
your crepes are ready..

Chicken with vegetable Recipe


Today noon my mum asked me what i am gonna cook today...actually i wasnt feeling to cook smth ,but my sister also asked that, i dont know if they really like my foods or they re just lazy to cook and it s good someone else cooking:)) anywya i just needed smth easy to cook so i went market and bought some vegetable and chicken and just put them together and plus spices .. the result was better than i expect , i think i learn this job well.. :))

Ingredients
500 gr chicken(cut in small chucks)
1 marrow
1 carrot
2 pieces garlic
2 red bell pepper
1 sp butter
1 sp tomato paste
salt
black pepper
thyme
curry

I put in a bowl all chikens , put on it all spices and salt and mix and an let chiken to get all of them s smell and taste.. while it is waiting with spices , i cut marrow,carrot,bell peppers,garlic in small pieces. i put butter on fire and added vegetables on it, put salt , and let it cook for 5 min. after i added chicken and cooked for a few min more, i melted tomato paste in 2 glass of hot water and added o my chicken , i cooked it around 30 min.. u cant guess the result, perfect smell into kitchen and perfect taste..
