Bodrum Mantı (Fried Turkish Ravioli)

I know it is been long time that i didnt write but i had reasonable excuses.

My dad had a big operation , stayed long weeks at hospital. While we were thinking he was recovering, there were some complications, thanks GOD he is better now at home.

Hard times also good to understand your real friends, some of friends made me disappointed, some other made me surprised and felt they are more closer to me than i thought before..

Anyway this is life, all the bad and good things are for us. The most important thing is we r healthy now and i m back with a nice recipe:)

I tired this at a restaurant by a friend recomandation , and ididnt feel regret at all!!! it is amazing delicious, called Bodrum mantı, as far as i learnt it is cooked in Bodrum which is a port city in the southwestern Aegean Region of Turkey.

Ingredients

2 cups flour(300 gr)

1egg

125 gram butter

125 gr. mince

1 onion

2 cup yoghurt

Enough salt

Black pepper

Red pepper, garlic.

Mint

For the dough, put flour ,egg,1/2sp salt, and enough water and knead it.when it is ready, divide it 2 piece and open it with rolling pin,it should be thin around 1mm,

Honestly mine wasnt thin enough, if it is thin ,it d be much better..

On the other hand with some oil cook chopped onions , add mince with salt&black pepper.

Cut each dough sheet into squares of about 1.5"x1.5".Put a very small piece of filling at the center of each square. Continue until the dough is finished.

when all the mantı are ready ,fry them for some seconds, they will be cooked so easy, drain oil.

Melt butter, add tomato paste, some red pepper.

i like yogurt with garlic, so mix your yogurt with chooped garlic, you know if you eat this ,you have to eat it with garlic,

on your mantı, add yogurt and sauce,on the top add mint and you can serve..

Bon appetit.....

Potato Ravioli (HINGAL)

I am feeling right now that i am in the heaven , while i am tasting potato , butter.. yummy!!
When i was a kid ,we had a neighboor who used to cook "Hingal" , i always loved it , and i felt like i am kid now, the taste the same like she did, her name is Yasemin who was living next door; i have liked her, life is weird, i havent seen her from years , i dont know where she is or what she does, this hingal just made me remember great memories. I guess i am getting old as i started to talk about past:)
She is Circassian , and this Hingal a Circassian food which is also cooked in Cantral Anatolia area of Turkey.
The difference from the usual turkish ravioli is ; hingal bigger than regular turkish ravioli, there are some different shape variations, you can do whatever you like. I used a form that i like.
Ingredients
For the dough;
1,5 gl of all purpose flour (300 gr)
1 egg
1/2 table sp salt
water
For inside;
2 potato
1 onion
red pepper
black pepper
salt
butter

peel potatos, and cook them till they get soft, other hand with some butter cook sliced onion till they get golden brown. Mash cooked potato and add on the onion, include pepper and salt, cook a few min more and let it cool.
Mix all dough ingredients , knead enough , it shouldnt be soft, open it enough , dont make it so thin, i used my form and cut them circular.

i put the circular dough, add inside some potato mix , and close it. It got nice shape , you can also close yourself but pay attention not them to open.
Wıth the ingredients i used, it is been 16 pieces which is enough for 4 but it is so delicious maybe just 2 may eat all too:)
Boil some water add a bit salt, put the hingals inside , cook for 10 min. Drain it . For the top melt some butter with red pepper and add on the hingals.

Bon appetit..

Anchovy Rice (Hamsili Pilav) Recipe

As i have mentioned yesterday, in black sea region , you can find thousands recipes with anchovy. The rice is one of them . I never tried it before neither in a restaurant or at home so it was nice for me to cook this. I felt it was a real challange for me, i cooked it in a pan not in the oven , so i needed to turn the food and fry both face of it. But i was succesful, honestly i was afraid to screw it but didnt. The result is perfect either look or taste..
I cooked it in a medium pan , wish i have done more:)
Ingredients
1/2 kg fresh anchovy (filleted)
1 onion
1 cup rice (200gr)
pine nuts
currants
oregano
salt
black pepper
cinnamon
corn meal

Let the rice wait in hot water for 20 min, slice onions into small pieces. Cook it with some olive oil for a few min, after add pine nuts, cook few min more than add other spices and currants, i put little cinnamon, not much, some people like it sweet but i dont..
mix it well , drain the rice , pour onto onions , add hot water 2 glass, or it should cover onto rices..
Cook it with low heat till the water goes off ,but dont make it dry.

on the other hand lie some olive oil into pan , cover the outside of anchovies with corn meal and line the base and sides with just over half the anchovy fillets skin side outwards.

Pour the rice mixture into the centre ,

and cover the surface with the remainder of the anchovies.

Sprinkle a little olive oil over , and fry it with low heat 10 min, after 1 side fried , close a plate on the pan reverse it and cook other side of it. i know it sounds difficult but if i done it everybody can!!
Just one note; as the anchovies will get smaller after cooked, you have to put anchovies more, and line anchovies without any hole..
Serve it warm and enjoy with Turkish/Black Sea Region Traditional food.
Bon appetit..

Homemade Great Turkish Pasta Recipe

When i came home today there was a good surprise for me; my mum has cooked homemade pasta!! me and my sisters love it, i am sure you will also adore that.
Normally i dont add the foods i didnt cook but i could make a privilege for this recipe, because this needed to be share..

Ingredients

4 gl flour
2 eggs
1/2 sp salt
Water

For Sauce
250 gr mince
2 onions
Butter
Salt
Red pepper

Put all ingredients for dough in a deep bowl , the water should be enough to make a dough , knead the dough , we say it should be like earlobe.. If the water s less ,you mayy add, or if you think it is too liquid, you may add necessary flour, it is easy..
After the dough is ready, let it rest 30 min..
You are now ready for the hard part: separate the dough into two pieces. Flour your work surface and start to roll out the dough, rolling from the middle, flipping it occasionally, and flouring it as necessary to keep it from sticking. Make it as thin as possible.Repeat it for other dough as well. After they are thin enough let them rest 3-4 hours ; They should be a bit dry.
After 3-4 hours , put one on the other, cut them long strip, put them on the other, cut them first from right to left and from left to right, they will be like triangle..
If you cant make it dont worry just cut them in an order the taste will be same and awesome:))
Boil some water, add the pasta for 7min. While they are cooking, cook mince and well chopped onions with butter for 10-15 min,add salt and pepper, mix them all.
After pasta is cooked ,drain them.
to serve lay some pasta on it mince sauce and again on the mince lay some pasta and the top again put mince and serve it warm.
"Ayran" is our traditional drink which is made by youghurt, salt and water is very good with this pasta.
Instead of mince you can also add walnut or yoghurt.
I guarantee whatever you add will be sooo great.
Bon appetit...

Manti (Turkish Ravioli) Recipe

Well although it seems easy to cook,it is not at all!! needed to spend much time, if you are new to cook i reccomend you to cook with less ingredients, lets say make it with just 1gl of flour, otherwise, pyou will get bored, tired and maybe hate to cook which i dont want;)
also when it takes much time ,the dough get softer and it stick each other so you need to be fast a bit.or for the first time you can ask for help :)
It is a food which is hard to cook ,easy to eat:))

Ingredients

2 cups flour
1egg
125 gram butter
125 gr. mince
1 onion
2 cup yoghurt
Enough salt
Red pepper, garlic.
Mint

For the dough, put flour ,egg,1/2sp salt, and enough water and knead it.when it is ready, divide it 2 piece and open it with rolling pin,it should be thin around 1mm, i know it is hard but when you start to do ,it comes itself, trust me ,it s my first time too:)
when it s opened, cut it as square , can be around 1,5cm..
other hand mix mince, finely chopped onion, salt and some black pepper, and put small amount of mince in middle of the dough that we cut. dont put too much otherwise you will live problem to close your mantı,
when u put them, merge the 2corners of the square dough, and it will look like a triangle..there are some varieties to close mantı,but this was the easiest one for me ,maybe next time if i learn ,i will do it another way..
when all the mantı are ready ,boil water in a deep pan, add some salt, and put your mantı,cook it for 5min.while it s cooking, melt butter and add some red pepper.
i like yogurt with garlic, so mix your yogurt with chooped garlic, you know if you eat this ,you have to eat it with garlic,
if everything ready, drain your mantı, add yogurt on it, and sauce,on the top add mint and you can serve..
