Burger and Spinach Puree Recipe


Today noon when my sister was leaving home asked for me to cook smth with meat, thats why i cooked burger. i like people to demand for me to cook smth and i love to see and hear their comment about my foods , sure if it is good comment:) luckily till now nobody didnt get poisoned or give bad reaction.. ;)

Ingredients for Spinach Puree
1 kg spinachi
1 onion
1 sp butter
1 sp flour
1 gl milk
2 clove garlic
salt
black pepper
parsley

clean spinach and cook withput adding water just with some salt till it get soft..while it s cooking, put butter and finely chopped onion,and cook a bit, after add flour , burn a bit, and while u re mixing up add the milk slowly and mix it till it get mastic.after add , garlic,salt,black pepper, and finely chopped parsley and mix,cook a bit.
when spinachi is ready , put it in blender and make it puree, after add this spinachi into your ready souce, mix well and cook a few min together and it s ready..

Meatball(köfte)

500 gr ground meat
1 onion
1.5 tea glass bread crumbs
1 egg
black pepper
mint
salt
red pepper
cumin

Put all ingredients in a bowl and knead finely, when it s ready take smaller pieces and shape like hamburger, put them all in a oily tray, and cook 10 min in heated 200 degree owen.
serve it with spinachi..

Domates Boregi ( Tomato Pie) Recipe


I think pie doesnt give the right explanation of "börek", as Turks ,we have a lot of type of börek and it is one of indispensable food for our kitchen. I will cook some types of börek later but today i cooked very easy, tasty and different type of börek. yesterday me and some collegues went a place for lunch and one of my friend ordered "domates böreği", i tasted it and loved it, when i came back hme i searched about it in internet and found out there are few variations of it.. i picked up the most suitable one for which i have tasted, the result was really amazing. i think if i tell this , u will get how good it is..; i cooked it 1 hour ago , and it s all finished:))


Ingredients

6 tomatos
1 bread s inside(we just put inside of the bread)
2 eggs
1 gl of cheese
2 clove garlic
parsley
dill
salt
black pepper
red pepper
basilicum
cut the tomatos small pieces, add on cheese,eggs,and bread..u can choose as cheese whatever u like, we have a lot of types of cheese , i choosed "lor". mixed it all ingridents and add your salt, black pepper, red pepper and basilicum . i dont like to tell this much spice or that much salt , it depends to people, it s all up to you , u may like pepper or not at all! and also add your garlic and finely chpped parsley and dill.. mix it all , the bread should be small pieces and it will be soft with the water off tomatos. oil your tray and put inside your mix.. and send it to owen and cook it around 25 min with 180 degree.. sometimes u can check it to avoit it burned:)

Crepe with Chicken Recipe



Today i was feeling so down , so i decided to cook smth , it s better than eating tooo much and gaining weight..
i needed smth tasty, easy .. so i wanted to cook crepe with chicken.. it was really tasty, i had cooked for 4 , and everybody asked me to cook more but i didnt find more energy to cook again:)
and the thing i found out today that i got speed, i cooked around 45min, normally it takes more:))


Ingredents
200 gr chicken cut small pieces
1 tomato
1/2 onion
1 red bell pepper
salt
oil
red pepper
black pepper
oregano
basil

For Crepe

1 glass of milk
1 glass of flour
1 egg
salt


i put salt and spices into chicken and mix all, while they waiting, i cut small pieces, tomato,onion,red bell pepper, and garlic.. i put some oil and added the vegetables, cooked a bit, after i added the ckickens ointo vegetables and let it cook for around 25 min, while it s cooking, for the crepe , i mixed milk,flour,egg, and salt. i put some oil into pan and added some crepe mix, and extend it like a circle, if it s thiner , it s better.. after my chickens and crepes are ready , i put some chicken vegetable mix into crepe and roll it. i did all of it same and put into a tray(oiled before), i made some tomato souce on it (optional) and i added 1 piece cheese in all crepes..
and put it in owen till all cheese get melted and cooked..
your crepes are ready..

Chicken with vegetable Recipe


Today noon my mum asked me what i am gonna cook today...actually i wasnt feeling to cook smth ,but my sister also asked that, i dont know if they really like my foods or they re just lazy to cook and it s good someone else cooking:)) anywya i just needed smth easy to cook so i went market and bought some vegetable and chicken and just put them together and plus spices .. the result was better than i expect , i think i learn this job well.. :))

Ingredients
500 gr chicken(cut in small chucks)
1 marrow
1 carrot
2 pieces garlic
2 red bell pepper
1 sp butter
1 sp tomato paste
salt
black pepper
thyme
curry

I put in a bowl all chikens , put on it all spices and salt and mix and an let chiken to get all of them s smell and taste.. while it is waiting with spices , i cut marrow,carrot,bell peppers,garlic in small pieces. i put butter on fire and added vegetables on it, put salt , and let it cook for 5 min. after i added chicken and cooked for a few min more, i melted tomato paste in 2 glass of hot water and added o my chicken , i cooked it around 30 min.. u cant guess the result, perfect smell into kitchen and perfect taste..

KISIR Recipe-Turkish Salad with bulgur(cracked wheat )


Today i came home, my mum has cooked very delicious foods actually,even when u look it, it was calling u to eat it! i think she s trying to prove that she can cook better than me:)) but ididnt wanna eat them , i just needed smth light that i can eat with tea, and i decided to make Kısır, it s salad a kinda, very delicious, easy to prepare and also nutrient.
i write some ingredents down but actually it s up to u, whatever u like u can put inside, especially everythng green inside is very suitable to kısır.

Ingredients
2 glass bulgur
3 glass boiled water
3 spoon tomato paste
1 tomato
1 cucumber
half onion
fresh mint
dill
parsley
1 lemon s juice
half tea glass olive oil
1 sp.salt
2 spoon pomegranate syrup

Put boil water on the bulgur, and lety it drink all water and cool down, while it s getting cool, chop finely your tomato,cucumber,onion,mint,dill and parsley.
after put lemon juice , tomato paste, oil, pomegranate syrup and salt on your bulgur and mix very well, the tomato paste should be homogen into bulgur. after put all other ingredents and mix all of it very well.. and here it s ready to eat, delicious,easy food.. i love it hope u will love too.. jsut one more note; pomegranate syrup s really perfect mate for this salad, and also u can use for your other salads at home too..

Gnocchi with tomato & vegetable sauce Recipe -Italian kitchen


Today i cooked gnocchi which s light,tasty food and also easy to cook.. if u like potato as much as me, this dish will be one of your favourite..


Ingredients (serves 4)

4 medium size potatos
1 egg(yellow part)
2 full spoon flour
Salt

Tomato & vegetable sauce
2 tbs olive oil
1 brown onion, finely chopped
1 carrots, finely chopped
1 garlic clove, crushed
4 medium size tomato
Salt
black pepper
Basillicum

Boil the potatoes until soft in the center when pierced with a small knife. Remove from the water and when cool enough to handle, slip the skins off the potatoes. Put the potatoes, egg,flour, salt in a bowl and mash together with your hands.After a minute or two it will form into a dough. Knead lightly. When it reaches a pliable consistency, it's ready.Sprinkle the surface with flour. Slice a fist sized piece from the dough ball and roll out into lengths that are about 3 centimetres thick.Working quickly while the dough is still warm, use a flexible knife to cut off 2 centimetre pieces. Slice off another fist sized piece and repeat until you have used all of the dough. Place the gnocchi onto a tray, leaving a space between each piece to prevent them from sticking together. After boil water and put some salt and add your gnocchies. boil 2-3 min .Scoop them out with a sieve, shake off the water and transfer them to a tray.
To make the tomato & vegetable sauce, heat the oil in a large heavy-based saucepan over medium heat. Add the onion, carrot, garlic and cook, stirring often, for 5 minutes or until the vegetables soften. after add tomatos, salt,black pepper and basillicum, and cook around 25 min..
and it s ready.
put the tomato&vegetable souces on to your ready gnocchis and put some parmesan and serve.

Bolani: Afghan Potato and Scallion Turnover Recipe


Hi fellows,
today i cooked bolani , it was so delicious.
Bolani , unleavened bread stuffed with potato, scallions and cilantro is one of my favorite Afghan snacks. in Turkey we call this "gozleme", but we normally dont put scallions and cilantro inside.
Afghans make bolani for special occasion such as birthday parties, engagement parties or holidays. i cooked this as honor of my dear afghan friend Samim who put efford for this blog:)

Bolani e Kachaloo
3 ½ cups all-purpose flour
1 cup water room temperature
1 tsp. salt
1 tsp. olive oil
1 lb. russet potatoes (about 2 medium-size potatoes)
1/2 cup finely chopped cilantro
1/2 cup finely chopped scallions white and green parts¼ cup plus 2 tbsp. olive oil1 ½ tsp. salt
1 tsp. ground black pepper
Instructions:Mix the flour and salt together in a large bowl. Slowly add the water and the teaspoon of oil and mix the dough together, kneading it a little until it forms a ball. If the dough is too dry to come together, add more water, a tablespoon at a time. Once the dough is formed, knead it for 10 minutes on a lightly floured cutting board. If you are impatient like us, set the timer so you won’t reduce the kneading time. Put the dough back in the bowl, cover with a cloth and let it rest for one hour.
In the meantime , boil the potatoes until soft in the center when pierced with a small knife. Remove from the water and when cool enough to handle, slip the skins off the potatoes. Put the potatoes, cilantro, scallions, 2 tbsp. of the olive oil, salt and pepper in a bowl and mash together with your hands or a potato masher until thoroughly combined. Some lumps are ok. You can also make this the night before and keep it refrigerated until ready to use.
Take a small amount of dough the size of a small apple and roll into a smooth ball. Spread some flour on the wood board and roll out the dough using a rolling pin. Continue to flatten the dough until it takes a round shape, is as thin as a tortilla, and about 10-12 inches across. The thinner the dough the better. If you have trouble rolling the dough to the shape you want, use a lid from a pot to trace a perfect round shape.
Spread ¼ cup of potato mixture on one side of the dough, leaving a 1/4 inch border around the rim. Fold the other half over and press the dough together with your finger to form a seal.
Heat the remaining ¼ cup of oil in a medium-size sauté pan over medium-high heat. Brown the bolani, two at a time, until golden on both sides. The bolani should sizzle when they hit the pan. Lay cooked bolani on a paper towel. Add more oil to your pan if your oil starts to reduce. These are best served warm but are tasty at room temperature.

first iranian food cooking experience

Hey people,
first day i prefered to cook one of iranian food as my bf s an iranian and i m expected to cook iranian foods:), i cooked Eslamboli-polow, they re so famous with rice, so i choosed that , it s different from turkish rices, but it was soo tasty.. and i shared it with whole family and all loved it and i suggest u to cook..
Eslamboli-polow
Ingredients: (4 Servings)
basmati or long-grain rice, 500 grams
ground lamb or beef, 400 grams
medium onions, 4
tomato paste, 4 spoons
cooking oil
salt
black pepper
Directions:
Peel and slice onions. Fry in oil until slightly golden. Add ground lamb or beef, salt, and black pepper and fry until color changes. Dissolve tomato paste in a glass of hot water and add to meat. Cook for a few minutes until little water is left.
keep rice in hot water for sometime and add to the meat , out some water and cook it till water leave..
