Arnavut cigeri (Fried liver) Recipe


In Turkey we call this as Arnavut Cigeri , arnavut means albenian in turkish.
I am really not sure if the albenians cook the liver in this way or we just made it up the name :)
If you like liver ,this recipe will be your indispensable. Very tasty and easy to prepare, also liver very good with the onion salad , great accompony!! you should try;)



Ingredients

1/2 lamb liver
1 gl bread crumbs
salt
red pepper
oil

roll small pieced livers with the bread crumbs, and also mix it well with salt and red pepper, fry it for 5 min..thats all.. really ,this much easy and tasty..

i also fried some potatos..
To accompony this food, finely chopp an onion, rub with some salt,to leave it from salt ,wash it . add chopped parsley, add some sumac , red pepper and lemon juice..

Homemade Great Turkish Pasta Recipe


When i came home today there was a good surprise for me; my mum has cooked homemade pasta!! me and my sisters love it, i am sure you will also adore that.
Normally i dont add the foods i didnt cook but i could make a privilege for this recipe, because this needed to be share..

Ingredients

4 gl flour
2 eggs
1/2 sp salt
Water

For Sauce
250 gr mince
2 onions
Butter
Salt
Red pepper


Put all ingredients for dough in a deep bowl , the water should be enough to make a dough , knead the dough , we say it should be like earlobe.. If the water s less ,you mayy add, or if you think it is too liquid, you may add necessary flour, it is easy..
After the dough is ready, let it rest 30 min..
You are now ready for the hard part: separate the dough into two pieces. Flour your work surface and start to roll out the dough, rolling from the middle, flipping it occasionally, and flouring it as necessary to keep it from sticking. Make it as thin as possible.Repeat it for other dough as well.After they are thin enough let them rest 3-4 hours ; They should be a bit dry.
After 3-4 hours , put one on the other, cut them long strip, put them on the other, cut them first from right to left and from left to right, they will be like triangle..
If you cant make it dont worry just cut them in an order the taste will be same and awesome:))
Boil some water, add the pasta for 7min. While they are cooking, cook mince and well chopped onions with butter for 10-15 min,add salt and pepper, mix them all.
After pasta is cooked ,drain them.
to serve lay some pasta on it mince sauce and again on the mince lay some pasta and the top again put mince and serve it warm.
"Ayran" is our traditional drink which is made by youghurt,salt and water is very good with this pasta.
Instead of mince you can also add walnut or yoghurt.
I guarantee whatever you add will be sooo great.

Semizotu Salatasi (purslane salad) Recipe


Purslane is very healthy and delicious vegetable, i like the cook it also but the salad is amazing , also is more healthy to eat as salad without cooking, it is full of vitamin C and iron. Great choice for the summer days, light ,tasty and easy to prepare just 10 min..

Ingredients
1 bunch of purslane
5 sp yoghurt
3 clove garlic
2 tomato

Clean the purslane stems and leaves by rinsing with fresh water. Cut in pieces,
mix yoghurt and mashed garlics, and add on purslane , mix it together; add grated tomatos on the top of it; and the salad is ready.. You can add parsley on it before serving.

Pasta with vegetable Recipe


An easy and tasty recipe, i dont know why i like pasta this much .
Dont forget pasta never made anybody fat all by itself.Italians eat pasta all the time.But Italians aren't fat at all..
It is my favourite dish, here is an easy and tasty pasta recipe ..

Ingredients


1 pocket pasta (i prefer penne)
1 carrot
1 red bell pepper
3 cloves garlic
olive oil


Add pasta in the boiled water, add salt and cook 10 min.
on the other hand, cook grated carrot,mashed garlic,and long&thin chopped red bell pepper with olive oil, after add cooked pasta on it and mix,
it is this much easy!!

Peach Pie Recipe


I am not so fan of dessert so i am more conservative to cook dessert but my family request me to cook dessert as well. I feel most of turkish desserts are heavy and lots of candy. I prefer a pie which is light , while i am cooking this i burnt my hand but the taste was worth that:)
By the way i learnt this recipe from my friend Ferhat' s blog; http://ferrostable.blogspot.com/
He cook awesome ,especially good with dessert, i stuied with him 1 year in same class but didnt recognize he was good with cooking :))
thanks to him for this great recipe..


For the dough:

250 gr. flour
50 gr. powdered sugar
125 gr. cold butter or margarine
grated lemon peel
1 egg
2-3 soup cold milk
A pinch of salt

On the pie

1 kg. peach
Two water b. granulated sugar
50 gr. butter
powdered sugar



Dough should be considered the most important point in preparing everything cold.Even cold hands in cold water before mixing the ingredients can be. We must move very fast while making dough.
Mix the flour, salt and sugar are open to go over the middle. Butter in small cubes in it and knead quick.
mix eggs, cold milk, and grated lemon peel.add it onto our dough.
Pick up on it and knead the dough with some flour and wrap with foil and keep it in refrigerate 1 hour.
Peach Peel equal and with sugar cook it for 30-35 min on low heat till it will be like jam but peaches shouldnt be melted uniform pieces cut into the sugar together on low heat peaches distributed without. after it cooked close the fire ,add some butter and close the cover of it and let it cool a bit.
when the dough is ready ,leave some dough to put on the top in fridge and Open rest of it thick with the help of rolling pin like 0,5 cm ; and lay it in a tray cook it in an oven for 20 min. Before u put it in oven , scratch a bit with a fork avoid it to make bubble.
After it cooked , pour all the peaches pan on it and put the rest of dough on it,
it is with your imagination what you want to do with that dough on it:))
and then cook it for 15 min more with 200 degree.
After it get cool, add some castor sugar on it and serve..

Yoghurt Soup (yayla corbasi) Recipe


I like soup , i have mentioned this before, Yayla corbasi is one of my favourite , very tasty food also can be eat as cold and good for hot summer days..

Ingredients

1 tea gl of rice
8 gl water
1 gl yoghurt
1 egg yellow part
2 sp flour
Mint
Salt


Pu water and rice and boil it, on the other hand beat yoghurt, the yellow part of egg,flour together and add slowly into the boiled rice, add salt, cook all together for 10 min, cook some mint and oil at other place, and add latest onto soup.

Green Beans with Olive Oil (Zeytinyagli Fasulye) Recipe


Today i was planning to cook liver (ciğer sarma) which my friend Dimitris reccomended but i couldnt find the proper ingredients at our butcher so i cooked vegetable which is more suitable for summer..
Green beans healthy, light ,tasty and easy to cook just you need to watch which bean you get, some beans dont cook for hours and hours!!
it should be stringless.

Ingredients

500 gr green beans
olive oil
1 small onion, chopped
1 garlic clove, chopped
1 tbsp sugar
2 tomatoes, chopped
Salt

First, wash the beans, trim both ends and shave along the sides with a knife. In a large pot place the onion and olive oil. Cook them together for about 3-4 minutes. Add the beans, garlic, salt, sugar, tomatoes. Pour in 1 cup of water.cook for 35-40 minutes(some beans can take more time,it should be soft), and add another half cup of water midway through. If needed, you can add more water later.

Let it cool for sometime, and it is ready to serve.

Pacanga Boregi (pacanga pie) Recipe


It is very easy and tasty pie, we say this kinda foods "börek".
You can easily cook and share with your guests, i put this in oven to make it light but you can also fry it, it would be tasty but fatty..

Ingredients
2 filo dough (ready)
pastrami (preserve of dried meat) or sausage
Cheese
Tomato
Red pepper
oil
Egg

Cut 1 dough in 4 pieces, you have to get 4 pieces triangle. put first sausage in 1 piece, i used sausage but the originally this pie should be with pastrami.add on it,1 piece cheese on it, tomato and green pepper.
Roll it thick. put in a tray which is oily, lay some egg on them and cook in oven till the pies get golden color.

Bulghur Pilaf with eggplant&meat(patlıcanlı etli bulgur pilavı) Recipe


Today i lived one of my worst day, first time i was hurted because i trusted a person. i wasnt expecting never ever, he really killed me, but life goes on right?
i cooked with hoping therapy; did it work? not at all!!
i even didnt eat today , didnt taste, my mum said the taste is good, hope you eat this in better days, better than mine..


Ingredients

2 gl bulghur
4 eggplants
2 onions
250 gr lamb(small chucks)
2 tomatos
2 green pepper
salt
black pepper

Cut the eggplants into long strip, fry .
at the other hand,cook finely chopped tomato, onion,green pepper,and meat with butter for 10 min, and then add some water,saltiblack pepper and cook more till the meats get softer.

place the long eggplants in a pan, keep some part of the eggplant outside of the tray,put the cooked meat on the eggplants.wash bulgur and add on it, then the eggplants outside the tray , close onto bulghur. put smth on it like a plate ,press to avoid it open.add 1,5 gl of cold water,
cook it till the water end..
serve warm..

Caput Asi (rice with meat&leaf) Recipe


Çaput aşı rice is belong to Denizli which is a city in Aegean Region in Turkey.
We arent used to eat rice inside meat , it is mostly iranian style as i know but when i was searching about Denizli kitchen, it was surprise for me to find a rice cooked with meat. Actually the thing is belongs to Aegean reagon is grape leaf, when the season the grape leaves grow, people used to cook this rice in Denizli.
In turkish kitchen grape leaf has a special place..



Ingredients

250 gr lamb
2 gl rice
1 onion
10 grape leaves
butter
salt
black pepper

Boil the meats for half an hour till they get softer, then drain.
chop the onion and cook a few min with butter,add meats ,salt and black pepper cook 5 min more, then wash the rice and add on the meat, and add 2 gl of hot water , close the pot's cover, turn down the fire, cook till the water is gone.
from other hand fill a pot water and add some oil , cook leaves 3 min ,and then cut it..
Before the rice cooked, add the leaves and cook it together for sometime.
take it from fire and let it rest 10 min.
when it is ready you can serve it with yoghurt inside garlic..

Chicken Cordon Blue


I like chicken more than meat , i like everything with it but cordon blue is one of my favourite dish, it is easy and tasty food.
I fried it but also you can try it in oven, it could be light but fry always more tasty, what you think?

Ingredients

4 boneless chicken breasts
4 slices ham
bread crumbs
4 slices cheese
2 Eggs
Salt
black pepper

Pound your chicken breasts out before starting, this will make them more tender. put some salt and black pepper it.Place ham on one side and cheese on the other of uncooked chicken breasts and close it. After doing this, drop into first beaten eggs and after bread crumbs.
pound the end of the chicken to avoid it open ,
heat oil and fry the chickens till they get golden.

Zeytinyagli barbunya(Roman Beans with Olive Oil)


In turkish kitchen ,we have a special dishes with olive oil, we call them "zeytinyağlı", as it is summer and it is season for roman beans, i like this food, tasty.
you can use fresh or there are conserves which was already boiled; i used that.


Ingredients

1 conserve beans (500 gr)
2 onions
1 carrot
1 potato
3 cloves garlic
1 sp tomato paste
salt
2 cuse sugar


cook for few min finely chopped onions and garlics with olive oil , add chooped potato, carrot, and tomato paste , cook 10 min, later add beans and hot water,salt,sugar, cook 30 min. you can serve with parsley and lemon.
the rice is good accompony for the roman beans.

Icli Kofte(stuffed mince balls) Recipe


This food was really hard to cook, i always loved it, i cant say it is cooked at my home so often but i understood why; it is realllyyyyy difficult to make it and takes much time, but i always love to eat it, i have guessed it is too hard but not this much expected:))
when i eat it ,i will eat slower anymore as i understood how hard it was cooked:)
i should honestly say when i was filling the bulghur, my mum helped me as i wasnt so successful.
Içli köfte is a food oftenly cooked in easten part of Turkey, i preffered to boil it to make it light but also you may fry it and i like it more ,but too fatty..
By the way i should add the pictures in recipes ;my mum's hands:)


Ingredients
1 cup fine bulgur
1 medium onion
1 tablespoon chili paste
1 teaspoon cumin
1 cup semolina
One full teaspoon of salt

For Inside;
250 gr ground beef
1 sp butter
3 onions
1/2 gl walnuts
black pepper
salt
cumin

Soak bulgur with 1 cup boiled water,let stand half an hour,add semolina, chopped onion,chili paste,salt,cumin,and knead.
cook 2-3min minced meat with butter, then add the chopped onion cook 6-7 minutes. Add spices and finely chopped walnuts. cook for some min and let it cool.
The most difficult part start now, get some bulghur as big as a walnut, and with one finger, open it from middle, and make it bigger with turning in your hand, it should be like a bell pepper.
It should be thin enough, when it is big and thin enough fill it with mince we prepared.
after you prepared close the mouth of it.
Boil some water and put the readp balls, and cook 8 min,
you can also fry it.
Serve it warm..

Vegetable soup


I was planing to make a broccoli soup but i saw the broccoli at home was spoiled. I was lazy to go market and buy new one so i decided to make a soup with whatever i have at home, i had potato and carrot , it was quite enough to make a delicious soup..
I really love soup, some people think it is just for winter and really they surprised when they see i am drinking steaming soup in the summer..:)


Ingredients

2 carrot
2 big potato
1 tomato
1sp flour
1 gl milk
olive oil
salt
black pepper
mint


Peel the potatoes and carrots, and cut in small pieces , put in 1 lt boiled water , add salt a bit, boil them till they get soft, when they are soft, make them puree with the help of blender,
on the other hand ,fry flour with some olive oil after add 1 chopped tomato, and put the carrot,potato puree, add slowly the milk and mix them well, if you feel it is too bold to be soup you may add boiled water , add salt black pepper,min,
boil one min more and it is ready.
i just tried it whatever i had at home so you may do it same, try it with bean,brokoli or whatever you like, you will not regret..

Steak with Tomato sauce


Today i cooked steak, i should thanks to the butcher man ,because he gave really good one:)) hope you are lucky as much as me..my mum said today a lot of food at home so please dont cook but i wanted ,so i just cooked for myself:))
1 piece steak was enough ,it wasnt thin, and also not so thick, it s around 2-3 cm thick.
When i put my steak to my plate i also did a rose from tomato ,it is good and easy way to make food look as good as it tastes.

Ingredients

1 piece steak
1 tomato
2 cloves garlic
Fresh basilicum
oil
salt
black pepper
parmesan cheese

i put very little oil in a pot, i cooked both 2 sides of the steak for 10 min on the little fire, while you are cooking it, add some salt and black pepper both sides.
on the other hand, put some oil in a pan,add chopped tomato,garlic, salt,black pepper and fresh basil, by the way basilicum again from my mumy is balcony,cook them for 10min also.
after your steak in a tray, add tomato sauce ,and the top fill with parmesan cheese,i really love it!!
heat your oven with 180 degree and cook your steak till the parmesan get brown gold..
after i take it out,i added more parmesan..i love it what can i do:))
